Fresh Ginger in Ginger-Peach Jam
Comments (3)I did find crystallized ginger in the spice aisle at my local WalMart but decided to try the fresh ginger any way. The recipe I used was the recipe from the insert in the Sure.Jell Lower Sugar Fruit Pectin. I just added the fresh grated ginger. I looked at the Kraft recipe which calls for 1/4 cup of crystallized ginger. I definitely didn't have a 1/4 cup after grating. Since I made two batches of jam, one with low sugar and one with Splenda, I just halved the ginger for each batch. It came out well. The ginger is very subtle and not overpowering. As for using Splenda, I'm not sure about that. The directions in the insert said to use 1-1/2 cups. I used maybe a tablespoon less to cut down on the aftertaste. When I added the Splenda, the peaches had more bubbles throughout than the batch with sugar. I wasn't happy about that. I could not get all of the bubbles out of the jars. I stuck a knife in the jar and tapped jars on the counter before sealing and there were still bubbles. I went ahead and did the BWB and the jars sealed. I'll test one before I give them away for Christmas. I'm also going to try one more batch with the low-sugar pectin without adding any kind of sugar. I'm just curious about how it will turn out. Comments (2)This is what it says at the Cook's Thesaurus. ginger = ground ginger = powdered ginger Notes: Recipes for baked goods often call for ground ginger. Don't confuse this with fresh ginger root, which is used mostly in Asian dishes. Substitutes: crystallized ginger (Substitute 1/2 cup minced crystallized ginger for every 1 teaspoon ground ginger called for in recipe. Rinse sugar off ginger first. This is an excellent substitution in many baked goods.) OR ginger root (Substitute 2 tablespoons grated ginger root for every teaspoon ground ginger called for in recipe. For best results, substitute only half the ground ginger in recipe with fresh ginger.) Comments (12)I'm always willing to try something new - I'll try leaving some uncovered and see what happens. My fridge tends to be damp - when you take room air and drop the temperature, relative humidity increases. But I'm open. Cooks Illustrated has a hint for how to remove excess water from mushrooms to be sauteed or added to a dish. It's simple - slice and then put them into the microwave for 3-4 minutes. Quite a bit of water will be released that can be poured out (or reserved to later add the dish, if desired) and the dry-er mushrooms are easier to use for the next step. Comments (7)Not that I am aware of. A refrigerator should work the same just keep the temperature set right by adjusting to 36-38 degrees using a thermometer. Watch out for cold spots! I know my fridge has the cold air blowing out on the top shelf so produce there freezes while the bottom shelf is warmer. Commercially, apples are harvested at different stages of ripeness depending on how long they will be stored. Dead ripe are great to eat upon picking but will not store as long. Starch tests or pressure tests are used to determine ripeness. Too green is not good but remember that even with the cold they will slowly continue to ripen. When I pick Red Delicious for storage at my home, I pick when the flesh is white, seeds black but still very crisp. Eating them at this point is not a good experience as they are like eating a raw potato. After cold storing them until early December, they are truly delicious! The flesh has turned yellow. Sweet but still crisp. Just mentioning this as over ripe apples will not store as long. The really big orchards have CA storage in which all the oxygen is pumped out of the cooler which really slows the ripening rate down.
