Comments (29)U.of MO Center for Agroforestry probably has lots of info available on pecans(as well as hickories, walnuts, & chestnuts) that will perform well in MO. I know a couple of the researchers at the New Franklin research farm. Native pecans grow at least as far north as Brunswick, where the James & Starking Hardy Giant varieties originated. MDC tree nursery probably has native pecan seedlings available many years, and Forrest Keeling Nursery, in Elsberry, used to offer both select seedling and grafted varieties. Stark Bros. usually has a small offering of reasonable northern/midwestern varieties, but the best source of grafted northern pecans is Nolin River Nut Tree Nursery(linked below) Some varieties are more susceptible to weevil infestation than others - Most years, weevils get the majority of nuts on the Peruque(small nut, with really thin shell and high quality kernel, which originated at St. Charles) tree here - and bluejays/crows get the rest, while Major and GreenRiver, less than 100 ft away, are unscathed. Posey, another thin-shelled variety, originating in IN is also more weevil-prone than the KY selections Major & GreenRiver. Peruque nuts have been dropping since late September, but Major, GreenRiver, and Posey have just started dropping within the last week or so. I've got some Southern pecan varieties growing here that still haven't reached shuck-split yet. I'll second scott's recommendation on the Circle Traps(developed by Tom & Edmund Circle)as a good choice in helping with weevil control. Serve them with sour cream or guacamole, if desired. SERVES 16 (change servings and units) * 4 jalapeno chiles (about 3 inches long) * 1/3 cup boursin spreadable cheese with garlic and herbs (from 5.2 ounce container) * 8 slices packaged pre-cooked shortcut bacon (from 2.2 ounce package, halved) * 1 (8 ounce) can refrigerated crescent dinner roll * 1/2 cup pineapple salsa (optional) or fruit salsa (optional) Directions Heat oven to 375 degrees F. Carefully remove stems from chiles; cut each in half lengthwise and again horizontally to make 4 pieces. Remove and discard seeds. Spoon about 1 teaspoon cheese into each chile quarter. Wrap half slice of bacon around each. On cutting board, unroll dough; separate dough into 8 triangles. From center of longest side to opposite point, cut each triangle in half, making 16 triangles. Comments (6)It's not quick but not much work. CANDIED PECANS (about 2 1/2 cups) 1 cup water 1/2 cup sugar 1/2 cup unsulphured dark molasses 2 tsp ground dried red chile 1/2 tsp salt 2 cups pecan halves Preheat oven to 250°. Grease a 9x12" baking dish. In a heavy saucepan, bring all ingredients except pecans to a boil over high heat. Add the pecans, stir well & reduce the heat to a simmer. Cook teh pecans 10-12 minutes, stirring occasionally until the syrup has been well reduced. With a slotted spoon, transfer the pecans to the baking dish. Bake the nuts about 1 1/4 hours, stirring trem about halfway through the cooking time. When ready, teh pecans will be dark brown & crunchy. Stir them a few more times & transfer to waxed paper to cool. Tightly covered, teh pecans will keep at least a week.~~TX Home Cooking (Make sure your oven temperature is correct.) I've used this one with pecans even though it calls for mixed nuts: SPICED NUTS 2 cups mixed salted nuts 1 egg white 1 cup sugar 1/2 tsp cinnamon Slightly beat egg white with a fork until frothy, then add sugar & beat. Add cinnamon. Pour this over nuts & mix until nuts are compeltely coated w/the sugar mixture. Spread out on a brown paper covered cookie sheet (or use parchment paper).
