10B, S. Florida, few questions, plz? (arugula, carrots, tree collards)

Hello!

We're new to gardening, and are attempting to do both perennials and annuals, this year. Does arugula grow as perennial or annual? Which varieties of arugula grow best in 10B zone?

We're very confused about the different varieties of carrots available. The kind we grew last year grew beautifully, but were terrible tasting. A bit strong and bitter, rather than sweet. I wouldn't even eat them. Does anyone have any suggestions for sweet carrots that will grow here? Or suggestions on how to grow the seeds we have from last year to make them more sweet? They are the "Danvers" variety.

We, otherwise, have some interesting perennials started, such as Malabar spinach, Okinawan spinach, and longevity spinach. We are hoping that the mulberry cuttings will root. We've gotten some of our citrus seeds to sprout from our breakfast lemons and grapefruits....but not sure I want to plant them, as our lot isn't that large.

Does anyone have an tree collards? Do they grow in S. Florida?

Any luck with gold potatoes? I have a bunch that have eyes all over them. LOL.
