Light Box and Angled Peninsula Lighting Decisions

Hello - We're in the middle of a budget aesthetic kitchen remodel. I'm trying to make decisions on lighting. I like the industrial/modern farmhouse look. Starting with 90's oak fluorescent kitchen. We're painting the cabinets white, pulling them down over peninsula, relaminating counter, adding subway tile backsplash. I'd like to also paint the entire room light gray.

- What size and how many pendants? Where? Considering:

or https://www.lowes.com/pd/allen-roth-Collinwick-10-in-Specialty-Bronze-Country-Cottage-Hardwired-Single-Cage-Pendant/50356228

- I hate the pendant off to the side that hangs over nothing today. We don't plan on putting a table in this area. Should it match the bar pendants? Or, something else semi-flush?

- What should we do with light box? Crown molding and rope lights? Bead board and canned lights? How many?

Before

Current (no judgies, I have small children)

I'd like this to be semi-legitimate when complete. TIA!
