ModernAire makes hoods that are squared, instead of having a slanted angle. A randomly picked example would be the model PS-16. The picture shows it without any cabinets. But nothing stops you from building the hood into a cabinet. If you are willing to pay enough money to have it custom-built, they can make it any depth that you'd like. You can either mount it closer to the surface of the stove (i.e. at or slightly below eye level). In that case you probably want it to be less than 24" deep, as it would otherwise be in your line of sight. Or you can mount it about 3' above the stove. This would allow you to put your head underneath, and you could thus make it extend all the way towards the front. Exact placement probably depends a little bit on how tall you are. I suggest building a mock-up from cardboard and verifying that you don't bump into the hood and that you don't have it block your view of the stove.

One of the biggest contributors to hood noise is the duct that goes from the hood to the outside. You could buy the quietest hood in the universe, but if the ductwork isn't sized correctly, it will be noisy. A hood with a typical 450-600 cfms usually requires a duct that is 8" in diameter. But many homes with exhaust ducts originally set up for microhoods have 6" or even 4" ducts. That means air will be forced through too small of a space, which creates noise. In your new build, make sure your scope of work includes an 8" diameter hood exhaust duct. Don't let the builder contradict you and say that "a 6" diameter will be fine". A 6" diameter duct will be easier for him to install, but you have to live with it. I've been talking about a hood with 450-600 cfms. If you plan on buying a large hood with 1000 cfms or more, your duct will need to be 10" diameter. Other contributors to noise are if the exhaust duct going to the outside is very lengthy and/or has a lot of bends to it. If you are doing a new build, check into this early. Also you need to be realistic that any motor, mounted at head height in your kitchen, is going to be noisy. So that is reality. If a very quiet exhaust is important, you can install a remote motor mounted at your roof instead, but that will be $$$.

I was traveling from Traverse City, Michigan to Detroit, Michigan on US-10. At the west Sanford exit, the sheriff had the highway closed and everyone had to exit. While at a standstill in traffic, I heard the annoying emergency sound on the radio followed by an announcement that all residents of Midland (I was in Midland) south of US-10 (I was south of US-10) and east of Eastman Road (I was east of Eastman Road) should evacuate their house and head for higher ground immediately. I sure was glad I was not a resident of Midland. I did cross over a few bridges where the water level was almost as high as the road surface, and I passed a park where a picnic pavilion had water up to its eaves. I wasn't worried, but then again "He who can stay calm when others are in a panic, obviously doesn't know all the facts."

My Wolf Pro Island hood is 18 inches high without any extensions, so it would be too low for my taste if used with a 7 ft ceiling. Nominally, you would want a hood height of 12 to 14 inches for a 7-foot ceiling, and this would best be operated with a remote blower so the motor/fan did not contribute to the height. No internal blower would allow room for baffle tilt and air flow in the containment space. There should be quite a few of this size available, and if you want something quasi-professional, perhaps ModernAire has a baseline in this height.
