we have a servery peninsula made for 3 stools with pendants hanging 27 over bar top, which is at 45", just over 6' total from ground. personally, I don't like to stare at lighting fixtures.

I've always had a hard time listening to high-brow Symphony concerts because I keep looking at the ceilings and wondering how they change the 1000 lightbulbs in those massive chandeliers. I mean, do they do a Peter Pan and fly from the wings? Do they string a floating bridge from the boxes? Do they bring in a cherry picker, and how would it fit in the aisles, anyway? Let's see, Vienna Philharmonic, Berlin Philharmonic, New York Philharmonic... All this is to say, I've also wondered about doing that in a home, because I've never figured out how... Enlightenment would save me on some very expensive tickets with not much music-listening.

Getting the table, bench cushions and window treatments first is the way to go here, it will also give houzzers a better idea of style.
