Caulk between tile and baseboard?

Just went to see a local production builder's models yesterday. I noticed that caulk was used around the whole house, not just the bathrooms, whenever tile met baseboard or cabinetry.

Now, I don't know if this is desirable or not, lol. For all I know, it's better than what I'm familiar with (my rental is grouted between the tile and the baseboard, and my old house was, too -- both homes used the same builder but in different states).

I prefer the texture/look of the grout (it felt like I was in a huge fancy bathroom wherever I went in the house, lol), but if caulk is better, please educate me!

Assuming caulk is desirable, can I match caulk to paint, if I later decide to paint the baseboards myself? (The house comes with glossy white baseboards and glossy white caulk, and I'd prefer to use brown trim if we keep the walls white. Obviously I'd also prefer not to use glossy white caulk on a purple wall or something, either.)

What have y'all done in your new homes? I may need to be talked into caulk, lol, so if anyone has any ideas on how to make it less glossy or bathroom-like, please share!
