Most shrubs are pretty low maintenance :-) The key is in picking ones that won't exceed their alloted space (reduces or eliminates any need for pruning) and ones that are well suited to your location. I'd make a visit to a good garden center or nursery nearby and outline your criteria - maximum size, light conditions, nothing that a toddler would find harmful, etc. and they can help with specific selection.

As a side note, evergreen shrubs tend to be slightly less maintenance than deciduous but generally are not as showy with regards to varying foliage/flowers and with little to no fall color or specific bark interest for winter.
