Does anyone else dislike the infrared broiler?

A while ago, I bought one of the last all gas Wolfe stoves with great expectations for the infrared broiler. (Note: my last stove before that was a Caloric from 1968, original to the house with direct flame broiler) After many months of trying and reading about and trying some more, I still find the infrared much inferior to my old direct flame broiler. Am I missing something or is this just something to be dealt with?

Cooked under one for 11 years. Perhaps you could share the problems you're having?

thanks. It just seems to take longer for one but even worse in my opinion is that when broiling meat, it doesn't seal immediately like the direct flame and it seems to dry things out more

Three cheers for your grandmother and her adventurous sense of color! May we all be bold rather than discreet in our old age. But perhaps we should skip the cheap cologne. I suspect the half bottle was because many people lose their sense of smell as they age and she honestly thought it didn't have much perfume to it. As for rose scents, I love them as rich and as heavy as can be. I love other intense scents, too, jasmine, lilies, honeysuckle. I will say that I prefer most flowers out of doors. Scented cut flowers in the house sometimes give me intense headaches, honeysuckle especially. Lilies are also too strong indoors. Narcissi actually become unpleasant to me in the house, developing a chemical undertone that reminds me of petrochemicals. Roses, though, are wonderful in the house or in the garden. And the same is true of my absolute favorite flower scent, lilacs. Rosefolly

Infrared Broiler - DCS or Other Oven

dear mydreamhome: When we were shopping for a pro-style range last Fall several pro-style all gas ranges in addition to the DCS, including Viking and Wolf, had an infrared broiler. (Just wanted to make sure your salesperson didn't lead you to believe that only the DCS had one.) I have friends who swear by them. I wanted a dual fuel range, so the infrared gas broiler wasn't a possibility for me. In the end I've been delighted by the grill function on my 8 pass electric broiler. (Perhaps I don't know what I'm missing?)

Eh, she's o.k. I guess. I've seen short pieces of her show here and there. I'm talking 5 min. or less. I prob wouldn't like watching the whole show all the time. Now Oprah on the other hand, I can not STAND that woman. All she did was talk over people and look at the camera to make sure it was on her. I will never in a million years understand how she got so popular and ridiculously rich. Everyone always says what a class act she is, not in my opinion. Her shows were trash in the beginning, like Jerry Springer, Maury etc. trash, now that she's filthy rich everyone thinks she classy. Nope, she can just buy expensive stuff, lol.

I don't think the Oslo to Bergen route is a particularly fast train. A quick look suggests the route to be 450-500km (just at or a bit less than 300 miles) done in 6 hours, so less than 60 mph. The French TGV model (that runs throughout much of Western Europe) regularly does long stretches at 300 kilometers per hour, just under 200 mph. The high speed rail beds are laser straight when possible with gentle curves. The route from Oslo to Bergen goes through a lot of valleys, has a lot of curves and turns, and most certainly wouldn't permit high speed. An interesting bit of trivia - when the high speed line between Paris and London (through the Channel Tunnel) was being laid out, the French were able to give priority under the law that permitted obtaining the needed land parcels to allow straight segments and high speeds. On the UK side, obtaining the needed land was not possible to the same extent and so the British segment from the Tunnel to London was less straight and had lower average speeds than the same train could travel on the French side. i don't know if that's changed, I haven't taken it in a few years.

Your experience is very different from mine. While on the learning curve for both the char broiler and oven broiler I nuked a fair amount of food--with the exception of high heat searing I was usually 3 levels down for broiling. I used the convection fan often and also would finish some dishes on convection bake with the broiler off. One helpful learning technique (discovered while toasting bread rounds for bruchetta) I used was to put a few pieces of white bread on a sheet pan under the broiler at different heights to see how fast they browned and to get an idea of hotter heat spots.

I'd suggest calling Wolf CS and running this by them. My interactions with them were always very helpful. A heads up--if you're out of warranty the service calls ran a couple of hundred bucks (I had two broiler igniters replaced over the 11 years). In the meantime you could watch the broiler as it ignites (there's a pause) and warms up so see if the honey comb IR reflectors start glowing after the gas ignites. As it's IR it tends to warm up pretty quickly. That broiler and the grill were my favorite aspects of my Wolf.

fyi, mine was 36" NG made around 2004-2003.
