Would you get the drop door or slide swing version of the Benchmark? For most people the Benchmark without the side swing won't be worth the price premium over the 800.

I haven't yet since its a brand new oven and I assumed it should be accurate from factory. But oven temp being off shouldn't affect hot spots, should it?

Bosch are the worse appliances on the market today in my opinion. One year ago I bought all new bosch benchmark appliances for a new house. IN less than a year I have had 3 repair issues (1 on the speed oven and 2 on the wall oven). While under mfg warranrty Bosch tried to charge me for the repair saying "we have to pay someone to remove the oven from the wall for the repair". It's a freaking "WALL" oven, meaning it's designed to be installed in the WALL, meaning when it needs to be repaired (under mfg warranty) then it has to be removed form the wall, not at my expense. They said there's a disclaimer in the manual (which I received AFTER I bought it, it was in the box with the appliance when it was delivered). That is something that needs to be disclosed PRIOR to my purchase, not after. Imagine the money Bosch will make from repairing their own appliances while under warranty if they charge 200.00 each time, seeing they've repaired mine 3 times. This is lubricious not to mention illegal. I will never buy anything bosch ever again. I have owned just about every brand of appliances over the years in the many houses I've owned, and this was my first time buying bosch and the first time I've ever had these kinds of repair problems. The quality is badm, the service is even worse.

Hence, your oven meets spec if it’s temperature ranges from 320* to 380* within a 20 minute cycle time. (Check out the GE Appliances site and search for ‘oven temperature variance.’) How Swing Effects Roasted/Baked Food Here are a few examples of how a high oven temperature swing effects food roasted/baked from tried-and-true recipes: - prime rib (shooting for MR) is well on the outside, bloody red around the bone - a tried and true family fruit cake recipe, baked for at least 70 years on all types of ovens, took much longer to bake, passed the tooth pick test, was sticky on the top center, and crumbled when sliced - a chicken and rice casserole never got done; I used the rice cooker to finish cooking the rice and the chicken was too tough to eat - two cake mix cakes, in which I adhered *exactly* to all directions, were baked using the shortest time indicated; they were full of tunnels, extremely dry, and tasteless How To Estimate Your Oven’s Swing 1. Position an oven thermometer in the center of the oven. (Cooks Illustrated recommends a CDN Oven Thermometer... of course Amazon has them.) - - - do not open the oven door until the test finishes - - - 2. Set your oven to 350*, and let it heat up for an hour. 3. Choose a start time. 4. Every 5 minutes (4 times in 20 minutes) note or take a pix of the oven thermometer. 5. The highest and lowest temperatures registered represent the oven swing. Note: technicians use a special tool to measure oven swing that is much more accurate. Phew! Time to return to my research!
