Turkey sausage and sauteed mushrooms keep them light and savory. Small and satisfying, they're also a good finger food for your next cocktail party. Prep Time: 30 minutes Ready in: 1 hour Yield: 1 dozen mini quiches Ease of Prep: Easy Recipe Ingredients 8 ounces turkey breakfast sausage , removed from casing and crumbled into small pieces 1 teaspoon extra-virgin olive oil 8 ounces mushrooms , sliced 1/4 cup sliced scallions 1/4 cup shredded Swiss cheese 1 teaspoon freshly ground pepper 5 eggs 3 egg whites 1 cup 1% milk Recipe Directions Position rack in center of oven; preheat to 325°F. Coat a nonstick muffin tin generously with cooking spray (see Tip). Heat a large nonstick skillet over medium-high heat. Add sausage and cook until golden brown, 6 to 8 minutes. Transfer to a bowl to cool. Add oil to the pan. Add mushrooms and cook, stirring often, until golden brown, 5 to 7 minutes. Transfer mushrooms to the bowl with the sausage. Let cool for 5 minutes. Stir in scallions, cheese and pepper. Whisk eggs, egg whites and milk in a medium bowl. Divide the egg mixture evenly among the prepared muffin cups. Sprinkle a heaping tablespoon of the sausage mixture into each cup. Bake until the tops are just beginning to brown, 25 minutes. Let cool on a wire rack for 5 minutes. Place a rack on top of the pan, flip it over and turn the quiches out onto the rack. Turn upright and let cool completely. Individually wrap in plastic and refrigerate for up to 3 days or freeze for up to 1 month. To reheat, remove plastic, wrap in a paper towel and microwave on High for 30 to 60 seconds. A good-quality nonstick muffin tin works best for this recipe. If you don't have one, line a regular muffin tin with foil baking cups. Comments (7)APPLE COUNTRY CHICKEN Yield: 5 Servings 1 tsp Curry powder 1 lg Golden Delicious apple, Cored and chopped 1 lg Yellow onion, finely chopped 1 tbs Lemon juice 4 oz Mushrooms, sliced 1 tsp Chicken stock 2 c Apple juice or cider 3 1/2 lb Chicken thigh, skinned 1 tbs Flour Place curry powder in a wide frying pan and stir over medium heat until slightly darker in color (3-4 minutes). Add apple, yellow onion, lemon juice, mushrooms, stock, and 1 1/2 C. of the apple juice; bring to a boil. Rinse chicken and pat dry; add to pan. Reduce heat, cover, and simmer until meat near bone is no longer pink; cut to test (about 30 minutes). Lift chicken from pan; arrange on a warm platter. Keep warm. Blend flour and remaining 1/2 C. apple juice. Gradually add to sauce in pan, stirring; increase heat to high and cook, stirring until sauce is thickened. Pour over chicken. The sauce also tastes good poured over baked potato or rice. **************** HEALTHY CHICKEN STOCK Yield: 16 Servings 2 lb Chicken bones, back and Neck Water -- to cover 1 Celery stalk 1 Onion -- quartered 1 Bay leaf 1 Carrot In a large stockpot combine chicken bones, back, and neck and the water. Add celery, onion, bay leaf, and carrot. Simmer over low heat 1-1/2 hours. Strain. Makes 4 to 6 cups. Note: To remove fat, allow stock to chill for 2 hours. Fat will separate and rise to the top. Scoop fat off with spoon and discard. Remaining stock may be used in recipes calling for defatted chicken stock. Parmesan Rice and Pasta Pilaf After the pasta and onion are sautéed, the oil is drained to minimize the fat content of this interesting pilaf. 2 Tbsp olive oil 1/2 C finely broken vermicelli, uncooked 2 Tbsp diced onion 1 C long-grain white rice, uncooked 1-1/4 C hot chicken stock 1-1/4 C hot water 1/4 tsp ground white pepper One bay leaf 2 Tbsp grated Parmesan cheese In a large skillet, heat oil. Sauté vermicelli and onion until golden brown, about 2 to 4 minutes over medium-high heat. Drain off oil. Add rice, stock, water, pepper, and bay leaf. Cover and simmer 15 to 20 minutes. Fluff with fork. Cover and let stand 5 to 20 minutes. Remove bay leaf. Sprinkle with cheese and serve immediately. Comments (16)This recipe is the most authentic and most delicious version I've ever encountered. I grew up in S. Louisiana, relatives both in N'awlins and Cajun country, and this version resembles what I had growing up. It's got a lot of ingredients, but trust me; this is worth the effort. In fact, I have made large quantities of the sauce ahead of time and frozen it in portions, and then later heated it up, adding the shrimp about 20 minutes before you serve it. The link is to a Google books page; it's not the most legible, but you can decipher it. It's from my favorite all time cookbook, Richard and Rima Collin's The New Orleans Cookbook. The glitches in the image of the recipe might confuse you, but in paragraph one you're adding the tomato paste; you don't add the shrimp until paragraph two of the recipe. Once I was in Miami Beach on Lincoln Road, and had a very similar dish (spicy shrimp in a tomato sauce) served in a bowl made of fried plantains. I was in heaven. Kim, that recipe is so simple! Haha, will have to try it when my garden starts producing tomatoes. DH loves raw tomatoes. (He hates it when I cook sliced tomatoes in my stir-fries.) Also, has anyone watched Ugly Delicious on Netflix? I thought it is pretty fun to see how the different food cultures create the same dish in each episode.
