Wolf or Thermador steam ovens and which convection oven?
Comments (3)I have the Thermador steam oven. Like it. The electronics panel did die after a few months, Thermador replaced immediately. The reservoir works fine. I've never cooked anything that required more than one carafe full of water. Wolf touts the ability to fill the reservoir while cooking. Comments (92)Have a look at Miele's recipe here from DGC 6800 cook book. On page 442, translating into Wolf's term, for baguette, it would be starting from cold oven: 1. 40˚C/104˚F convection steam 8 minutes 2. 50˚C/122˚F convection steam 4 minutes 3. 210˚C/410˚F convection steam 6 minutes 4. 210˚C convection 30 minutes The first 2 steps, would help proofing the dough further. Step 3 is for initial full rise with heat and humidity. Wolf does not have humidity adjustment where in Miele it can be set to 50% per recipe, so you can play around with timing, but 6 minutes after initial proofing sounds about right. Then finish off with dry heat, 30 minutes may be too long for a smaller loaf, but Miele program is written for the recipe in the book on page 110 for ~ 500g loaf. Comments (0)I was set on all Wolf cooking for our kitchen renovation--a 48" range top with grill and griddle and the Wolf single convection oven (M Series), and the Wolf convection steam oven. I'm considering Miele instead for a couple of reasons--the oven has a rotisserie and the steam oven is both plumbed and has a broiler. Thermador will be coming out with a 48" range top with grill and griddle option later this fall, and their oven also has a rotisserie. If I don't go with Wolf, I won't be able to take advantage of any of their promotions. I'm not sure how I'll like the look of the Miele and Thermador ovens to the right of the Subzero 36" separate freezer and fridge fridges (stainless with transitional handle). I'm out of space to panel the refrigerators--I don't have an inch to spare for the overlay. I could step down to 24" convection oven with Miele, but I'd prefer not to. Comments (9)I went through the same question some years back. Miele has more features for the $$, so I originally wanted that, but at the time they didn't have a combi/convection steam oven that could take 208V (what I had), so I settled with the Wolf instead. And I must say, I've been really happy with it. It works, it's not fussy. Yes, it doesn't have the color swipey screen the Miele has, but I'm not convinced I miss that all that much. Would I like a broiler? I think so, as it is something I use, but I do have another big oven with the broiler (that unit almost always takes a backseat to the convection steam unit) and I can use that when I'm broiling something, so it's not too bad. I've kept tabs on the Miele, and I've discovered that considering that if you don't get a plumbed unit, the Wolf is more forgiving than the Miele on how much water is in the tank (I'm pretty lazy and never fill it up all the way, and the Wolf lets me still use it as long as I have enough water). If you really want to go into the details about adjusting settings, moisture level, turning on upper element broiler, you'll want the Miele, but if you just want to use it, I think you'd like the Wolf.
