Cooking with cannabis

I've been baking cookies with cannabutter for several years now, but I've never cooked with it. Recently, there have been several shows on the Vice channel that feature cannabis dinner tours in Denver and Seattle. It seems that anything where you use oil or butter in the recipe can be used as a vehicle for deploying cannabutter.

So I have a question or two for anyone who has cooked with cannabis:

Do you let the flavor of the herb combine with the flavors of everything else in the recipe? With cookies, I've been able to completely hide the taste by not using any vegetative matter and adding spices (mint extract and ginger work wonders.)

Since ingested THC takes on average 90 minutes to have a noticeable effect, do you stretch out the meal and wait to see what happens?

How do you know how much THC is in each serving? Or mouthful?

There's whole new world of cooking on our doorstep. We managed to adapt to cooking with alcohol, it's reassuring to see that cooks are beginning to adapt to a far less toxic pleasure.
