Fig grafting

I got 20 cuttings from my neighbours tree which he doesn't know what kind of fig it is? The cuttings are all leafing out after 2 months, they are all about 6" and in small pots which I planned to leave outside and put mulch around them for winter which I think they will be okay, I'm in Atlanta, GA.

My question is can you graft any common and easily bought fig to any other type of fig root stock? and also any guess what type fig tree my neighbour has (brown he says and is rip around August - September). My neighbour bought it from Home Depot years ago, If I had to guess Celestial or Brown Turkey.

The fig trees I have and would like to try to graft are: Brown Turkey, Green Ischia, Italian Everbearing, Italian Honey, Olympian, Kadota, Black Mission, LSU Purple, Texas Everbearing, Magnolia, LSU Scott's Black, Desert King, Noir de Barbentane, Lemon and Peter's Honey.
