Sowing seeds for fall - questions

I have eggplant, tomatoes, peppers, black eyed peas and various beans and corn that I planted in July that are all doing good. My pumpkin I started in Aug and it is blooming.

We are having really nice weather (low 90's during the afternoon, 70's at night) which is unusual for the end of Aug. I started broccolli, cauliflower and basil last week and they are all up. I would like to do succession plantings of these.

My questions regard the following and when to direct or at what temperatures do I need to be at to direct sow these:

Cabbage (A&M says Sep 1) I have Early Jersey (their rec'd and the package says it needs under 75 degrees). Kind of confused over that. It would never be that cool Sep1 or maybe still warmer than that in Oct. I may go ahead and start a few and do succession planting and see what happens.

Turnips?

Lettuce?

Leeks - do I plant these when I plant onions?

Chives - again, with the onions?

Cilantro?

English Peas, Sugar Snap Peas? When it's cooler I think (Oct?)

I'm not planting but a few of anything and some things in succession so I'm sure I'll learn from this.
