Zucchini

I know "what to do with all the zucchini" is a common question, but specifically I want to try and preserve some. I literally picked 10 in one day this weekend and have it coming out the ears. Next year I need to learn my lesson and not plant 5 zucchini plants.

Anyway, last year the frozen zucchini came out watery mush... not very good. Blanched unblanched it didnt really make a difference.

Does anyone have any tips on how to preserve zucchini for use in the winter, added to stir fries, casseroles, curry, stew, rice, etc? Specific blanching routine, maybe dehydrate a little or bake it first?

I know I could grate it for easy zucchini flavor.

I dehydrated a lot of it and most of it didn't get used... kind of a shame. I could always feed it to the dogs.
