Thanks Patricia, I'll upload a PDF with the room dimensions. As far as ditching the fan lights, I tend to agree with you. I hardly ever use the fan lights, it puts off very harsh light. I can't get rid of the fan though, I live near Houston and it gets hot here in the summer! I planned for the recessed lighting to be more for an accent and ambient lighting, just to brighten the room a little. I'm installing caseta dimmers and will probably have them dimmed to 20% or so most of the time and will probably have the ones near the kitchen off most of the time, which is why I'm splitting the lights into 2 circuits. I'm also toying with the idea of installing individual dimmers or relays to control each light individually. But when I have them all on at full brightness I don't want a bunch of shadows, so that's why I'm having trouble with the layout. I'm just not sure if I have enough lights and I also don't want my ceiling looking like a mini golf course, lol. I really prefer 3000K lights, I like how they are close to incandescent bulbs in color and the ones I have are 80 CRI which is average, but they look really good in my kitchen. There were existing 6" cans in the kitchen and I put surface mount halo led's in that are 3000K and the color in the room is very nice, to me. It seems odd that all the suggestions have most or all of the seating with its back to the TV and/or the windows. I dunno, but I think I'd put the couch as in your first photo, and add a couple of chairs in that same zone = TV room. Then put a small cluster of chairs at the other end of the room as a conversational grouping (around a table) with the option to look out the windows or enjoy the fireplace.

Moving the fridge next to the door is a less expensive change than moving the stove. But it's also a less functional one. You move from sink to stove a lot. And your kitchen is about 2 feet wider than optimal if you want the stove across from the sink. (My sister's kitchen had this problem. It was a constant, low grade annoyance until we remodeled.) I would also bet that your stove hood is a recirculating model that isn't vented outside. That will also be a constant, low grade annoyance. Move the stove. You'll be happier! Second, shallow pantries are much more functional than deep ones. Nothing gets lost in the back and you instantly see what you want. Put your coffee station next to the fridge and close to the table. Or put it next to the sliding door and close to the table. You will enjoy having that table. It will mean that the non-cooks can hang out with you in the kitchen without getting in your way. The kids (if any) will do homework there. The spouse (if any) will read their tablet there. It will be just like an island with stools, except more comfortable.

@biondanonima (Zone 7a Hudson Valley) Yes, the peninsula with overhang makes it deeper, not longer. That is also why I hadn't initially wanted the sink on the peninsula because I had envisioned a large uninterrupted surface for rolling out cookie dough or being able to lay lots of containers for meal prep. With my current layout, I only have 72" on the pantry/fridge wall, so I wouldn't be able to fit the range there, I would need to extend into the dining room. With the sink where it is at, I think I may still have a dilemma with dishwasher placement. I think it will block access to certain cabinets while open. If you were to keep the wall where it is at, how would you place things? I do like having the larger access or the access on the right side because when coming from the other side of the house, you have to walk around the dining room table of where the current kitchen entry is. I feel like having entry on the right helps the traffic flow a bit better. And I guess my initial thought was having the u shape would keep traffic out of the cooking zone when accessing the backyard/basement. Not sure if that matters a ton, but that's what was going on in my head.
