Early Fortune Cucumbers - get bitter toward end of season

Hi there,

We plant early fortune cucumbers every year (save seeds). We live in the southeast in zone 7a. They taste wonderful and are quite prolific. As we get to mid-July, those cukes that are growing become mis-shapen, turn white and taste bitter.

We tend to back off on watering once they are producing. Maybe that's an issue? Or, am I picking them too late? I've played with different size and timing to pick.

Any tips to address bitter cukes later in the cycle?
