Need help taming overgrown vegetable garden

I am suddenly overflowing with tomato, kabocha, and watermelon (not the produce, but the plants). I have been tying them to trellises, poles and a "roof" of wire fencing. They are sprawling onto paths and through the perimeter fence. They are shading other plants, like rhubarb, kale, strawberries, potatoes and runner beans (unfortunately not the lettuces, which could use it). Can someone offer guidance on how to manage this? What to cut back, what is ok to shade, what to train where? FWIW my garden is a square with sun is that is mostly from east and west. Is there a better way to organize it next time?
