Hi all! I planted my honeyboat delicata on April 26th and my first winter squash experiment has been very successful! I've had 20 beautiful fruit on the vines for awhile, trimmed my vines to help ripen what is hanging and by my calculations, they should be ready by August 10th. My question is should I go ahead and harvest some or all? Most have turned the tan color and pass the fingernail test and are very hard, but reading about proper curing on the vine, apparently I should leave them to develop starch to sugar. What do you guys think?
