pickling beets in 2 day time frame

I'm about to pull up all of my beets, as I need to make room for fall crops. I want to pickle a bunch, but not sure I will have time to finish it all tonight. So - any opinions out there about what to do? Should I just cook the beets tonight, and keep them in the fridge until tomorrow - then make the brine and finish? Or cook the beets, make the brine, and keep the beets in the brine until tomorrow? Thanks for any suggestions. :)
