summer pruning pear tree

just moved into a house 10 months ago with a badly sited, poorly maintained pear tree (probably d'anjou). We cut it WAY back in the winter, not knowing if it would survive. It did, and has a nice crop this year. I now realize that it needs to come down another foot as it is still too tall to harvest (it's on a weird slope). Should i cut all the new growth that is straight up (not providing shade to the fruit), or wait until dormancy and cut the whole business down. I was thinking if i pruned now it would benefit the tree as we live in CA and the drought is so dramatic - maybe it would help by using less energy to the new growth?
