No Baseboards and New Tile height difference

Doing a remodel of the house. The old tile was travertine and much thicker than the porcelain wood plank stuff. The tile installers are starting to put it down and I noticed that when they go to finish up against the existing walls in some places it will be slightly short (not tall enough so that there is a small vertical gap between top of tile and bottom of sheetrock wall). Note that there has never been baseboards in the house.

The question is what do we do at this point? Can the tile installers put a little extra thin set around those edges? This will make it not level but does that really matter cosmetically or functionality-wise?

Do I get a sheetrocker to come in and cut out above the bottom and put in a whole new piece and then mud/texture/repaint?

Do I have the tile floor people rip up what they have done and float the floor more to get a higher base to start from?

What is the most economical/easier solution for time and money?

Thanks All!!
