Oven Amp Requirements (Why Is New Oven So Much Higher Than Old)

I'm replacing my single wall oven. I currently have a GE Profile single wall oven. I just bought the house and it was built in the late '90's. I'm assuming it is the original oven. I'm replacing it with the Viking VSO730 single French door oven. My current oven is on a 30 amp breaker and the Viking requires a 50 amp. Why would it be so much higher? It doesn't seem like the requirements should be that different for different single ovens. I'm assuming it would be a big mistake to connect the Viking the my current 30 amp circuit.

Sorry if this is a dumb question. I'm both an appliance and electrical novice.
