I have read about new Gag self cleaning cartridge for their new combi steam oven line. Apart from marketing material saying that it will leave your combi as clean as a pyro oven cycle, I have not seen any video or picture demo about that just yet.
Sigh. Would that it were so on my old one.... But cleaning it really isn't that bad. It all comes apart.
I've read the promotional materials on the new one. You might read the conversation Chanop and I had about CSO sous vide in my went to an appliance store thread. Short version, if you have it, sure you can use it to cook sous vide (literally "under vacuum", as in using a vacuum sealed bag). It's not the idea device for it, however. There's also a vacuum sealing drawer, which may do a better job, or easier one, than a countertop model, but also gives you a size limit (size of the well in the drawer).
I believe there's also a broiling element, though behind glass because of the steam. If you need some top browning, there it is. Great if you don't have another oven.
Those seem to be the big differences from mine, which is about six years old.
