Any such thing as "a little bit" of stir fry?

I love stir fry, but there is always the prep -washing, chopping, dicing. Not to mention cooking the rice, which I love rice; but I always make more than I need. Same with the veggies. It's just me here. I have to buy one whole head of cabbage. And at some stores you can't buy just one green pepper, one little zuchinni, or a pack of two mushrooms.

The worst part is the leftovers, both fresh and cooked. I can get three servings out of one wok of stir fry, which I put the leftovers in a couple containers and freeze for future meals. I also prepare all the raw veggies at once and freeze what I don't use in one large freezer bag because I know they'll rot before I get around to cooking them individually. SOMEtimes I use them, more often then not the bag becomes one big snowball. What a waste.

I've tried the small frozen bags of Stir Fry veggies in the store but don't like them, too much water when you fry them. I suppose they would make more sense as far as portion.
