5 foot shelves and how many brackets

My dining room is completely open to my kitchen. I have three 5 foot cherry shelves I want to put up with brown/natural cast iron supports/brackets. They will be on the large open yellow wall in photo.

I measured where the studs are and I can have two brackets on both ends screwed into studs. Being that the shelf is 5 ' long, should I have a bracket in the middle even though it won't be screwed into a stud? My walls are plaster and lathe.

Second question is---would you use white brackets and not the natural brown? I was thinking there is so much white already in the area but maybe I'm wrong.
