Comments (11)Nancy, I actually prepared the insides for the sandwiches already and we'll assemble them at 1:00 on Sunday. I read some of the stuff is good for a week in the fridge and some is good up to 72 hours in the fridge. The only thing I'm afraid I made too early is the cream cheese, butter and mint mixture I made that on Wednesday. It smells fine but I don't know if that is going to keep okay for 4 days in the fridge. I'm doing the Salmon and Cream Cheese spread for the bagel chips as late as I can so it can be mixing at least 24 hours but no more than 48 hours in the fridge. That way everything is done since I'm doing most of the work (I have a two year old and am 8 months pregnant) it will be easy because the last thing to do will be assemble the sandwiches. The shower is 20 miles away so I have to transport all of the food and the buffet equipment and decorations over there Sunday morning and I can't do anything from this evening to tomorrow evening because it is Shabbat. Everything starts at 2:00 so I'm hoping 1:00 will give us time to assemble the sandwiches and they won't be soggy by the time guests arrive....See MoreHearty, hot sandwich ideas?
Comments (17)This recipe of Deborah's makes delicious Italian Sausage Sandwiches. Italian Sausage And Pepper Sandwich (Deborah's) 6 Italian Hot sausage (use sweet for less spicy or half of each) 2 large brown onions (I don't know from brown so I use spanish ) cut into 1" slices 3 large garlic cloves, minced 1 red bell pepper cut into 1" slices 1 green bell pepper cut into 1" slices 2-3 roma tomatoes quartered (I remove some of the seeds- also think roasted tomatoes would be excellent) 1/4-1/2 lb. mozzarella sliced thin or shredded (or use provolone) 1 1/2 Cup good red wine Olive oil Salt and pepper to taste 1=loaf French bread or 4-6 small individual rolls In a large lightly oiled skillet, on medium heat, fry the sausages until browned on all sides. Remove, cover with foil to keep warm. Drizzle 1 or 2 tbsp. olive oil into the skillet. On medium high heat fry up the onions, garlic, bell peppers until they become slightly browned on the edges. Add the wine, salt and pepper and cook uncovered for about 15 minutes. Cut the sausages in half (lengthwise) and add to the skillet along with the tomatoes, cooking about 5 minutes more. While peppers and sausage are cooking, cut the french loaf in half. Remove some of the interior bread to make room for the filling. Place bread on a baking sheet and spoon pepper mixture and some juices onto the bread, arranging the sausage halves on the top. Lay mozzarella slices on top and bake in a preheated 425* oven for about 12-15 minutes. Remove from oven and let rest for a few minutes. Comments (8)Reporting back: I made tea sandwiches yesterday and done the edges with chopped parsley. Today the parsley looked just as fresh, no dark edges or anything. I do know that the parsley had just been put out at the store so it was extremely fresh to begin with. I chopped it with a ceramic knife which also could have made a difference.
