Pantry or open floor plan? Which would you choose?

We are purchasing a new home that has a wall of pantry cabinets that back to a staircase with a large room on the other side- our debate is whether to remove most of the wall of cabinets leaving only our fridge to open up our staircase to create more of an open floor plan. Would have a pony wall so we would still have lower cabinets with a large counter top. OR to keep it as is to retain the pantry storage. Other side of kitchen is L shaped with sink, dishwasher and stove. The kitchen feels dark and closed in but adjacent room has tons of natural light. *Excuse the mess as current owners are still in process of moving out*
