Removing 4" granite slab backsplash

I'd like to remove the 4" granite backsplash as well as the existing tile backsplash and replace it. I was told that I may have a big gap behind my granite backsplash once removed that will be too large for the new tile backsplash to cover up. Has this happened to anyone and how did you fix it? I know I will have a gap because we out these countertops in when we moved in, I'm just not sure how big it will be.

One other point- if I recall correctly (it's been 8 years since we put these countertops in, but I don't think there was drywall behind that granite backsplash. The granite company had to go to do a 6" backsplash to cover up the hole back there.
