White Quartz discoloring

I finally picked a countertop--a white Quartz--and it's back ordered 4-6 weeks giving me enough time to rethink everything and even reconsider marble (darn you posters who continue to assert etches and patina are no big deal!)

As I re-research I see a few comments on white quartzes yellowing over time if exposed to sunlight, etc. Is this a real problem or more hypothetical? Most of my kitchen is dark but I have some small rectangular windows in my backsplash that for several hours a day as the sun moves can hit directly onto my countertop.

if I'm going to see yellow patches in 3 years or so I may as well go with my first love, marble. Can someone please let me know if the yellowing is ineviteable or just a worse case scenario that doesn't happen to most countertops. Thanks!
