Difference in Silicone rolling pins

Been searching on the Internet for silicone rolling pins.

Found one advertised as a Silicone rolling pin for fondant.

Is it different than a regular silicone rolling pin that you use for cookie, pie crusts, doughs. ?? I like the size of the one advertised for fondant. ......Talk about confusing.

I've never used a silicone covered rolling pin. On the one hand, I think it would stick. On the other hand, I think it would release. :) Can you chill them?

I have a fondant rolling pin which I really got for other stuff. It's way long and stainless, so is easy to chill. It is very good for fondant.

How large to you want to roll it? You can get a hand crank sheeter for a reasonable price second hand, if you don't need it to be big.

I have a silicone rolling pin and it does stick a bit but a light dusting solves that problem. It probably isn't as good or beautiful as a SS one, though!!!

Sunnyco, I'll just bet that's what my mom's rolling pin started out life as! My father made it for her, I'm sure that it was originally a dowel. That's basically what mine is too although it came from Wm Sonoma & was more costly than a closet pole (I'm sure). The edges of the ends are rounded a bit. Demicent, those hollow glass rolling pins are the coolest. I see them at glass shows all of the time but always wondered about their fragility. I guess they'd have to be pretty durable for them to still be around & in use. Nina

My SIL is a professional chef and he gave me a really big pin - 30" long. When I make my triple batch sugar cookies or pizza dough it rolls all of it out at once (but I run out of room to maneuver it on the counter so it is used on the dinette table). I also have a regular sized one for piecrusts and a small 8" one I ostensibly bought for the grandchildren that I prefer to use for the small leftover gathers of dough. I sometimes use my French pin for rolling pasta but I am not fond of it, and I use a teflon pin for really sticky doughs. I occasionally use my antique 3" diam. pin with lovely turned ornate handles. I like to use that because it was my Grandma's and it brings back nice memories (I'm a great-grandma so that is how antique it is). Goodness, I didn't realize how many rolling pins I actually have until this post!!! And, I use them all - that in itself is amazing. My daughter had a marble pin and she says it was only good as a weapon - it squashes everything. She now happily uses a regular sized maple pin. I had a glass pin but found it difficult to work with on chilled dough - I ended up pounding the dough to soften enough to roll. That only makes tough dough, not flaky. I think some heat or friction is needed to meld the flour and butter together anyway. GASP, sometimes I even use lard instead of butter for making it flaky! I refrigerate my pins and lay ice cubes in plastic bags on the rolling surface if I'm making piecrusts. Other doughs I don't worry about being so chilled while rolling. If the dough gets too warm it gets popped back into the fridge to chill out for a while. To each his own. Nancy

From what our customers are saying silicone starts out fine, but over time they also start to stick. I'm with Linda... wood is what I grab the most when rolling out pie dough. I also have a marble one that I stick in the fridge to get cold before rolling doughs(when I remember). Use ice water, cold butter/lard, etc., when making pie doughs. I even make our granite counters cold when rolling out doughs. Cheers to you for making your own pies for the first time! NancyLouise

Here is what Cook's Illustrated Magazine had to say: "Since rolling out pie crust is job No. 1, we started there. A good rolling pin should spread this finicky, delicate dough easily and smoothly, without sticking or tearing. In the test kitchen, we’ve long preferred handle-free French rolling pins for flattening pie dough, since they give us a direct sense of the dough’s thickness and of how hard we are pressing down. Most of our tapered French models weighed less than the handled pins but had just enough heft for this task. One of our handled pins also worked well—at just under 2 pounds, it was slightly less maneuverable but didn’t leave us with cracked, crushed dough. Should a pin be straight or tapered? One tapered model left pie dough thick at the edges; others rolled evenly. We got out our measuring tape and discovered that the problematic pin started tapering from closer to its middle. So fat-bellied that it resembled a lozenge, it provided only 4 inches of straight, flat rolling surface. Considering that the bottom of a standard pie plate measures 7 inches across, pins that stay straight for at least 6 inches function best. As for handled pins, some simply spun in place instead of rolling over the parchment-covered cookie dough. Our go-to pin for this job turned out to be a 19-inch, handle-free straight dowel in slightly textured maple. At 1½ pounds, it was just weighty enough to lend us a hand but light enough to let us maneuver it easily. Another straight, handle-free dowel rolling pin initially looked perfect for the task, since it comes with attachable rings for rolling out cookie dough to a desired thickness. It's not for me....DH is the kitchen gadget guy and he thought the red one with a red silicone mat would be a good idea for a cooking 14yr old grandaughter.....Gotta be the red or nothing....I have a 60 yr old maple pin that I will not trade for anything.

I guess my concern is the length....probably the 10 inch versus the 12 inch fondant pin, used for general baking would okay??

It would be fine for general baking. My fondant roller is 20". (IC, it's more industrial looking than pretty.) It needs to be bigger than the sheet of fondant if you're going to cover a full sized cake. The set sounds useful and Christmasy and appropriate for a 14 year old, unless she specifically asked for a fondant roller for covering cakes as in wanting a big one.

You originally asked about the difference from a regular rolling pin. The fondant one should be a smooth tube. No markings or creases or handles. Some rolling pins are like that -- plain dowels. Many rolling pins are tapered or have handles, have logos, measures and other markings, etc. For fondant, it's supposed to be straight and smooth and creaseless. Otherwise, it's just a rolling pin and should be perfectly fine for cookies, pie crusts, etc.

Re sticking, the concern I had with the silicone is specifically for use with fondant. I suppose people might oil it. You don't want flour for fondant, though it's fine for cookies and pastry.

I went to a restaurant supply store eons ago and bought me a big, hunkin', wood rolling pin. It is great.
