Heritage apple tree pruning advice needed

Hi all! I was hoping to get some advice on an old apple tree in the pacific northwest that recently came into my possession. The tree is quite old (50+ at least?) and hasn't been taken care of for a long long time. It still produces big red apples though. Please see photos attached.

The water sprouts are a good 6 to 8 feet tall and there is a heck of a lot of thinning out to do. The first big branch that sprouts just above the base (on the bottom right in photo below) is a bit of a disaster: it is rubbing against two other main branches and I think the whole thing needs to go. The second photo attached indicates the rub spots.

My gut tells me the whole branch should come out, but I'm worried that with all the other pruning I'd be stressing the tree too much. I'd be interested to know what those who are far more experienced than me think?
