Comments (12)Tina, I just wanted to say thank you and good luck with all your brugs! :) Mike, I hope your cuttings from Iris Marie and Aleya Gardens arrive soon! There's always a treasure or two or three in every trade/order that I get whether it be seeds or plants! And yes, I'll try to keep smiling! I'll be going to Lowe's and Home Depot tomorrow so that'll cheer me up a little. Plus, I'll be getting my two copies of the Codename: Sailor V and Sailor Moon mangas while I'm up there in the area (there's a Barnes and Noble there). Comments (13)I had an area in the kitchen that had upper cabinets, but no lowers. It's about 16" deep, so too shallow for base cabinets. So here is what I came up with: This is made with two 34" high unfinished bookcases from The Woodland Mills, and a variety of other pieces of MDF and wood. The top is IKEA Numerar finished with Waterlox satin. The baskets are from The Basket Lady. (I designed the whole thing with those particular baskets in mind.) The wine rack is just a shelf with strips of 1/4" x 1/4" wood glued every 2" to keep the bottles in place. It sits on brackets and is not attached, so if at some point we decide that we'd rather have a flat shelf there, it can just be flipped over. Comments (38)We have an over abundance of eggplants most summers. My favorite way is to slice about 1/2 inch thin, salt and let sit for about 40 minutes. Rinse off and press to remove any remaining moisture. If using 1 large eggplant, add to a plastic bag with 1/2 flour, shake to coat. Put two eggs in a bowl and whisk, put panko and parmesan cheese in a pie plate. Dip in egg, then press into the panko mixture pressing down to get the coating to stick. Place on an oiled baking sheet and grind salt and black pepper onto the tops, spray with cooking spray and bake at 425 for about 15 minutes, flip to the other side and bake about 5-10 more minutes or until it's golden brown. Put a nice, thick slice of fresh mozzarella on each slice and stick it under the broiler until the cheese is nice and melty. Serve with pasta. We also often just cut into slices and put olive oil, salt and pepper on and grill. Sometimes we stuff with ground beef or ground sausage and tomatoes, garlic, etc. Traditional eggplant parmesan gets made a lot in my house this time of year but I strongly prefer the first recipe I wrote as it allows the eggplant rounds to get and stay crispy. Comments (45)Finally found my recipe - but I really do not measure everything that precisely: Meatloaf 2 - 2 1/2# ground beef or turkey 2 - 3 eggs 1 clove garlic, minced finely 2-3 Tbs. fresh parsley, minced 1 Tbs fresh marjoram, minced 1 - 2 Tbs. minced green onion 3/4 tsp. black pepper 1 tsp. salt 2 Tbs. smoked paprika 1/8 heaping tsp. nutmeg 1 cup stuffing mix crushed fine - I use Arrowhead Mills ketchup Oven 350F Pack well into oiled loaf pan, and bake 50 minutes . Cover top w/ ketchup and bake for 8-10 minutes more. Let cool 10-15 minutes before cutting. 8 - 10 servings And my mom used to make meatloaf surrounded with rice in 1 big pan. It was 1 of our faves as kids - the rice would get all crispy on top and soft underneath and soak up the the juices (and grease) from the meatloaf - sooo yummy! I've done it that way myself, but my rice always seemed to come out much harder to chew than my mom's version.
