Replant new vegetables for fall or let spring plants hold over

Hi all,

Here in Texas we had a phenomenally wet spring and summer and my vegetables, especially tomatoes and peppers, developed very late. Too late to produce much at all. Now it is hovering around 100 every day and none of the fruit is actually setting. I am trying to decide if I should pull those plants out and start over or if I should coddle the ones that are already planted until the weather starts to cool again. Not sure if there is an easy answer to the question but I would love any advice I can get.
