Need Advice on Pruning European Roses

I bought or was given my first roses in 2003, but this is the first year I've ever needed to think about pruning the European roses because we had so many deer in the area. A new fence and nearby development (as much as I hate it) have solved the deer problem, and now I want to know how to prune to best advantage while still preserving hips for seed this fall.

I also want to encourage my Autumn Damasks to rebloom--I have six plus two of Blanc Mousseux and they have never been inclined to rebloom. Spring bloom was good so lots of hips forming.
