Need Help - Recessed Lighting - Vaulted Ceilings and Color Temperature

I'm installing LED recessed lighting throughout our house in California.
The "look" I'm going for is a 6" dimmable LED trim similar to this one by Cree or Commercial Electric.

I prefer the look of a flush trim rather than a bulb.

Question
1: I want the temperature to be consistent throughout the house (common areas and bedrooms and bathrooms) and am
trying to decide between 2700k and 3000k. I've read every blog or comment out
there (and on this forum) but I haven't found a strong consensus which
is better. I don't want too much yellow tone in my lighting but I'm also
finding that the 3000k LED trims are double the price of the 2700k
equivalents. Which would you pick if you were in my shoes?

Question 2: All common areas like the kitchen, family room, dining room, and living room have vaulted ceilings that are at 11 degree slope. I don't want the recessed lighting there to be a gimbal or eye ball or directional type of light. Has anyone seen any applications where a homeowner installed the same flat LED trims (like I linked above) to provide ambient lighting? Or because of the vault, would it point like a spotlight and look bad?
