Comments (50)This recipe originally appeared in the New York Times. Seems too simple to be this delicious but it is a wonderful marriage of flavors. Red Wine Pinto Beans with Smoky Bacon Ingredients: 1/2# smoky bacon, diced 1 large onion, peeled and diced 2 celery stalks, diced 2 medium carrots, peeled and diced 4 garlic cloves, minced 1 large sprigs rosemary 1# dried pinto beans, soaked overnight 1 T. coarse kosher salt 2 c. dry red wine Optional toppings: olive oil, coarsely grated Parmesan, black pepper or red pepper flakes In the bottom of a large pot over medium-high heat, brown bacon until golden, about 5 minutes. (I like to remove the crisp bacon and add it back at the end). Stir in onion, celery, carrots, garlic and rosemary. Cook, stirring occasionally, until vegies are tender, 5-7 minutes. Drain beans and add to pot along with 1 T. salt. Pour in enough water to just cover the beans (about 7-8 cups). Bring liquid to a boil; reduce heat and simmer gently until beans are just tender, 45 mins - 1 hour. Meanwhile, in a small pot over medium heat, simmer wine until it is reduced to 2/3 cup, 20-30 mins. Remove rosemary branches from bean pot and discard them. Pour wine into beans and bring to a simmer. Cook for 10-20 mins. longer to meld flavors and thicken broth to taste. Mocc, I appreciate the indulgence, thank you - I very much wanted to see how it grew in your climate as well. It has made it to the second list - my first list was emailed last week...hopefully to be picked up May 18th. Cold Heart leads the second purchase list...I can't wait to choose it myself. Comments (34)I've noticed that when the skunks dig, their holes are usually sort of cone-shaped and the armadillo holes are a little more rounded. As long as the skunks are only out at night, we just ignore them, but if they come around during the day, we assume they are not well and shoot them. I like armadilloes even though they dig up the yard. I just assume they are doing us a favor by eating white grubs. I saw what I hope is the last snake of the season on Sunday afternoon. It was 80 degrees here, so of course they were out near the driveway soaking up the heat. It was just a little black and green racer, and I mean really little----I've seen bigger earthworms. I haven't seen a rattlesnake in about a month. Yay! I don't miss them when I 'm not seeing them. Jessaka, I cannot believe you encourage woodchucks! They can be so destructive to a garden....but then, if you're feeding them yummy things, maybe they leave area gardens alone. We don't have woodchucks here and I am glad because I'd probably feel like I had to be kind to them and feed them too. We feed pretty much anything that shows up here, as I cannot bear to see skinny, hungry-looking animals. With ponds and creeks low or even empty in drought years, I put out water for them year-round. I wanted to live surrounded by wildlife, and we do, but I don't think I realized just how much wildlife we'd see on a regular basis. As for the cold.....it is here, isn't it? It has been months since we had the kind of harsh wind chill values that we had yesterday and today, and I'm not looking forward to the next few days. Our county already is seeing an increase in wildfires, and it will get worse after all the plants that still are green freeze and either die or go dormant. Comments (12)I only ever got down to 33 on Saturday nite, and 34 last nite. The soothsayers were wrong again! Was debating what to do tonite! NOAA is predicting down to 30 tonite, and while I don't believe that's gonna happen, I decided to stick the pots over my things again for one more nite! Decided I might be tempting fate if I didn't! Then it looks like we're gonna be sailing under blue skies with warm temps for at least a week! I didn't get any moisture out of this last one, so still really need some, but am hoping they're right anyway! After a few cloudy, chilly days, I'm ready for a stretch of SUNSHINE!
