Quercus virginiana vs. Olea europaea...Live Oak vs Olive

These two species can be trained into the same styles and both have similar-looking leaves. The leaves on both can be reduced in size when trained as a bonsai, and both grow under similar cultural conditions, e.g. temps, etc.

I would like to know if the leaves on a Live Oak have the same reduction potential as Olive leaves, which can become quite small, stiff, leathery, and flat? Do Live Oak leaves, even when reduced in size, retain the characteristic, rolled margins, or will/can these leaves also become flattened like the leaves on the Olive?

I have found very little specific information regarding the techniques that can be used to reduce the leaf size for Live Oak when trained as bonsai. I know all about leaf stripping to induce a new and smaller crop of leaves to replace the larger leaves. If this technique is used for Live Oak, will the newer, smaller leaves revert to the juvenile, holly-like leaves? I want to avoid this leaf shape on Live Oak.

Thanks for any help.
