Amish Paste/San Marzano/Plum tomatos...best storage method

Wanna try some amish paste or san marzano type tomatoes this year. I live in the NW and we have been having an unusually mild winter. Regardless I am wondering if it's easier to just vaccuum seal or freezer bag em till winter when it's time to make tomato sauce? I plan on reducing for a few hours in the oven in a enamel cast iron and was wondering if the quality will take enough of a hit if they are frozen. If pre cook before storing or not, reducing the water may go a long way since the ice crystals wont quite form but regardless want to be sure if there is a method to freeze for a few months and then create sauce.
