Kitchen Open Shelving Suggestions All Welcome

I'm going to be putting some open shelves in my kitchen, as close to the ones you see in the pictures below. My questions are:

1.) My shelves would be stopped on the left by a wall and on the right by a wall or the fridge as you can see in the design picture. Would you suggest leaving a gap between the end of the shelf and wall or have it butt up right against?

2.) Should I backsplash up until the first lowest shelf as both pictures have done?

3.) I have the shelves in my plan in pink. I'm wondering if any other configuration would look better. More shelves? Less? Especially since having one right abve the fridge would be weird since the shelf depth is less than the fridge depth

4.) What would be a good depth of the shelf? I'll be putting spice jars and things like that, but the top most shelves just decorations and decorative plates/cups n stuff.
