Cranberry lemon meringue pie :)

Ok, in fairness, this isn't a true KAW post. I can't bake in my kitchen yet, so I baked in my sister's kitchen. It's Christmas time, my sis just went gluten-free, and I felt so bad that she wouldn't get to eat dessert, that I have been working on developing recipes that she can enjoy with the rest of us.

I had never made a meringue pie before, and then it hit me, cranberry meringue - or even better, cranberry lemon meringue. I made a gluten-free crust, blind baked it, lined it with a cranberry filling, then made the lemon curd and meringue on top. I don't have an image of the inside but it's beautiful, ruby red on the bottom, lemon yellow, then fluffy as a cloud white. The hardest part was waiting for it to cool. It disappeared faster than anything I've ever baked.

So here's a picture of the top of my very first meringue (perhaps a little over cooked). Maybe one of these days I'll be able to pull one of these out of my own oven. Here's hoping.

Anyone else out there baking wild and wonderful holiday eats?
