Pipe leaked, water poured down to kitchen Should I file insurance

January 1st, my water pipe located above kitchen bursted, water poured down to my new kitchen causing ceiling damage and some wood cabinet swollen. We remodeled this kitchen less than 2 years ago and hasn't told our insurance about this remodeling. My questions are:

1) Should I claim insurance for this damage, not so much concern about the appearance damage but mold that is the most concern we are having right now.

2) Will insurance punish me for not telling them about my kitchen remodeling?

3) Should I call independent disaster evaluator to evaluate the damage or what should I do? It's been 15 days now, we want to act fast because waiting too long isn't good. The ceiling seems dry already as we have humidifier runs for a few days. Today, I notice there is a trace of water damage on a ceiling in a different spot. I checked the area above the ceiling it looks dry to me, not sure why it shows sign a few days later as I didn't see it before.

The reason why we didn't claim the insurance yet because we are concerned that insurance premium may go up. Will insurance cover water damage due to old pipe burst? My pipe is not new, it has been there for a long time, it looks old though. My house is over 40 years old. Thanks for your help.
