What to plant this time of year

Here, in south Tn it is cold damp, freezing aat night, possibility of snow later this week and through Feb.
I would like to start planting wild life foods plants and wild flowers and anything to replace what timbering, small farming and whatever else has done to the property since 1770s.
What can be planted in woodland edge and among large open spaces among mature trees and some hillsides under trees. Wild grapes and muscadines and so on.
I don't think i could mange funding for the number of expensive plants that Burpee and others list.
What plants are native and cheap or easily obtained, that can be planted now?
