Limes ...

Silly question - please indulge - how do I know my limes are ripe?

They obviously stay green ... so I was wondering, is there any visible sign of ripening?

Thanks.

Hi Agnes,
Ripe limes will be firm but not hard.

They do go more yellow as they ripen, the yellower they are the sweeter they are. I've started picking the odd one already but they are still a bit hard & not very juicy.
Like so many things in the garden you may just have to try one & see!

Safe recipe for lime syrup or preserved limes
Q

Joy Of Pickling has a recipe for pickled lemons or limes - whole limes immersed in a brine of 1 T sea salt or canning salt per each cup of water (p. 76). Store in the fridge and ready to eat in about 3 weeks. She suggests using a brine bag to keep then under the surface of the brine. AFAIK that is the only approved recipe but given their acidity I don't think safety is a big concern. I think the problem with trying to can lime syrup is the same as with canning all citrus - heat making it bitter. But it should freeze well. Dave

Brian!!! How you buddy!! HUGS buddy!!!! Listen, I have been wondering how things are going? I saw what your yard will look like and now a greenhouse to boot! If there was a way to put that bar into your greenhouse, just think of the possibilities...lol Have you been able to get all your plants out of the yard? The perennials and shrubs and stuff? Then all your citrus and others.? By the way, don't forget to take Sugar with you...lol How far from your original home is this? Is the weather the same there? You must be getting very excited to get your new place all done and to set up that greenhouse..Always just on time...You will have it set up before the cold weather moves in, much earlier than you last attempt..lol You do have the plastic cover already or will the one you already have be big enough? Please, if you could, could you start a new Thread about your whole set up, the progress, pics of the trees, yard and the building process if you get time? I am thinking many here would love to be by your side when you do like me... Brian, big hugs buddy.I can only imagine the challenges that lie ahead and yet I know you will come through perfectly..You always do...Great job

I grew it. Originally Four Seasons listed the Red Lime on their web site incorrectly as Red Finger Lime. I purchased a tree thinking I was buying a Red Finger Lime.. After the tree fruited I knew it was not a finger lime. Realizing their mistake Four Seasons changed their web description from Red Finger lime to Red lime. I did not want to waste my time on the Red Lime and tossed the tree out.

Thanks guys. We did try two and surprisingly juicy - I think we will just need to experiment and get to know our tree!

Aggie,

I have a tendency to leave mine on the tree until they start to drop. They can be quite yellow by this stage, but are very juicy and flavoursome. If I need one earlier, I lightly tug on them and if they come off the tree then they are ready.

You can use them before this but I agree with Sarah May -they are usually harder, less juicy and more sour.

Regards,

Fiona

Thanks very much. I will try leaving them on.

We are getting our second crop now (i think) - very small buds. I don't even know when the fruiting season starts and ends !!

Aggie, my lime seem to have flowers, baby fruit & big fruit all at the same time through winter, I thought it was just mine!
My lime was given to me by my best friend so it makes me particularly pleased that it has so much more fruit than any of the other citrus in my garden!

Sarah - thank goodness it's not just my trees. I currently have a meyer lemon flowering with baby fruit and three largish green lemons. I have a lime with flowers, small budding fruit and small to medium fruit (we ate three of the larger ones to see if they are ripe). I have no idea when they are meant to all be fruiting, and when they are meant to be cropping. Also, I read on a site I googled that some oranges take about 7 to 9 mths to ripen. I just don't have the patience to stand and watch them ripen !!

What type of lime do you have?

It is called granulation Pamela. Make sure the tree gets enough water during fruit development. Correct nutrition is also important and harvest the limes early (before they turn yellow)
