Heather I didn't find them earthy tasting, but then we always cook them with other things not alone, and the tubers take on the flavour of the whole dish. I've never had them just boiled on their own, but then we don't cook any other vegetable like that either.

I knew they were called girisole, but I didn't know what it meant. Thanks for that Dee. I love the way they grow but they are terrorists in the garden and you should never, NEVER, rotary hoe a patch that has had them growing, or you will have them everywhere. I know this from experience.
I also love to eat them but they don't like me. I would say they are rather sweet tasting, especially when baked. I get terrible indigestion from them, which perhaps relates to my nibbling on them raw during the long period of time it takes to prepare them for cooking.
I always laugh when I see people asking on these forums, where they should buy them to grow. Go to a good old fashioned green grocers, and buy a baggy of them and just pop them in the ground!

I hope you noticed the correction at the bottom of the page which states that 'girasole' is Italian, not French.
