What is the difference between water bath and pressure canning?

Water bath canning requires boiling water to cover the jar top. Pressure canning only uses 2 " 3 inches of water and has a special sealing lid in order to build steam and temperature to reach higher than boiling temperatures. Pressure canning is used for canning low acid foods as a water bath does not reach high enough temperatures to kill bacteria in low acid foods.
