Is it safe to change the ingredients in canning recipes?

When canning fruits and vegetables, the best practice is to follow recipes as directed. Even the slightest change can cause a recipe to become less acidic and causing bacteria to grow in canned goods that can cause botulism. Many canning recipes call for citric acid or lemon juice, not for flavor but to adjust the pH to the proper level to prevent spoiling.
