EASIEST PEANUT BUTTER COOKIE

1 c. peanut butter
1 c. sugar
1 egg
(I add a little vanilla)

Mix and drop on cookie sheet. Press down with fork. Bake at 350 degrees for 10 minutes

I thought I'd try it with Splenda for my diabetic DH.

....it's strange how good these are, and no flour!

Mammie, I hope you see this. Here's a recipe I made when DH was on Atkin's.

PEANUT BUTTER COOKIES

1 c. peanut butter
1 egg
3/4 c. Splenda

Mix well. Roll into balls (1 tsp. each). Squash with a fork crisscross. Bake at 350 for about 10 minutes. Makes approx. 48 cookies. These are very fragile melt-in-your-mouth cookies. 56.4 carbs per batch.

Mammie, i did use Splenda, since my DH is diabetic. But I used a whole cup before I saw Patti's post about using 3/4 cup. She had also mentioned adding Vanilla, but we just ran out, I think I will add a little next time though. These cookies were very good, so easy, and quick to do. .
I am going to email this recipe to my 10 yr old DGS, he is a good cook, he made little pecan tarts for our Christmas lunch and i just sent him the No Bake, Cocoa Oatmeal cookie recipe too.

I use this same recipe, but instead of pressing them down with a fork, I roll them in balls and press a Hershey kiss on each on while they're still warm.

Those are so darn quick and easy!
Don't try with reduced fat peanut butter tho. I did and it was NOT good!

Ahem, no bake Cocoa Oatmeal Cookies?? Do I want to know? They sound good!

Cocoa Oatmeal Drops
1/2 cup Cocoa
1 stick Butter
2 cups Sugar
1/2 cup Milk
1 tsp vanilla

Combine, boil 4 minutes, add:
2 cuts Oats, spoon onto waxed paper.

I havent made these in years, found the recipe scribbled in an old cookbook my mom gave me. She used to make these when i was a kid. some folks add peanut butter... i don't tho.

All you would have had to do is go to Google and type in "3 ingredient peanut butter cookie recipe" and you would have had it.

I do that all the time when looking for recipes.
