That sounds good. I am making a pot roast. I was gonna make it traditional way, but I think I will add some Hatch Chile Peppers (since you mentioned peppers). It will surprise the missus.

I use tortilla chips for my King Ranch casserole.
1 large bag tortilla chips
1 can cream of chicken soup
1 can cream of mushroom soup
1 can (don't drain) Rotel
2 cups cooked cubed chicken
2 cups lightly sauteed peppers, sliced, I use around 2/3 sweet and 1/3 hot peppers from my garden
2 cups shredded Monterrey Jack /cheddar

Stir the soups,peppers, and Rotel in a bowl
Put a layer of chips on the bottom of the casserole, sometimes if the chips are large I will squish the bag to break them into smaller bits.
Follow with a layer of chicken, soup mixture, cheese, and then make a second layer like the first.
I put extra cheese on top.
Bake for 45 minutes at 350.

The only casserole I kind of make is a baked ziti. I like casseroles, I just never think of them.

Here's one of many Texas king Ranch casserole. It has an interesting history, it was made on the king Ranch to feed the crews. It can be made with ground beef too.

There's one I have been making for years now and we absolutely love it.
It's from the Sweetpotato queen books, the author Jill is a good friend. I make a few adjustments when I make it.
It's called Death Chicken, because it's quite often a dish taken to the family when there's been a death. Very common in the South.
I mix up my liquids and pour some of it over the rice before putting the chicken pieces down so that all the rice gets wet. Then put the chicken down and pour remaining liquid over it all. The seal it and don't peek is very important! You can use any kind of chicken pieces with or without skin.

8-10 slices bacon
1 cup long grain rice, uncooked
1 fryer chicken, cut up
Salt and pepper to taste
Paprika
1 can condensed cream of chicken soup
1 cup water
Garlic powder
Pinch of nutmeg
1 tsp. oregano
2 heaping Tblsp. parsley flakes
Recipe

Line a 9x13 casserole with uncooked bacon (I used about 8 - 10 slices - I also greased the pan first). Pour 1 cup of uncooked rice over the bacon. Put skin-on, bone-in chicken pieces of your choice on top of the rice. Sprinkle the chicken with salt, pepper, and paprika. Whisk together 1 can of cream of chicken soup, 1 cup of water, some garlic salt, a pinch of nutmeg, 1 teaspoon of oregano, and 2 heaping Tablespoons of parsley flakes. Pour over the chicken. Cover with HEAVY (it matters) aluminum foil and bake for 2 hours at 300 degrees with no peeking.

Another casserole that is easy to make and which my sons liked:

Chicken casserole

Biscuit mix, Bisquick or similar
3 cups frozen mixed vegetables
1 family size can cream of chicken soup
3 cups cooked cubed chicken
Milk for making biscuits and for casserole

Boil the veggies for 5 minutes. Drain.
Mix veggies, chicken, cream of chicken soup and about a cup of milk, put mixture in casserole dish. Make biscuit dough but add enough milk so the dough is thin enough for drop biscuits. Drop biscuit dough by spoonfuls on top of the chicken mixture.
Bake at 350 until biscuit topping is lightly browned.

Anyone have any vegetarian ones? Dairy allowed, not vegan. Always looking for new things to make for my DD's.

I make a vegetarian squash casserole that we just love! I really don't measure, adjust as you desire.
This will fill a 9 X 9 dish.

1 prepared box of Stove Top stuffing mix (I like the cornbread, but any flavor will work)
Medium acorn or small butternut squash
2-4 yellow squash or zucchini, chopped in half rounds
medium yellow onion, chopped small
Mozzarella and Parmesan to top (maybe 1-2 cups)

Bake the winter squash until tender, then scrape the flesh from the skin. Break apart into bite sized pieces.
Saute the onion in butter or olive oil.
Mix in the prepared stuffing mix.
Add chopped summer squash and sauteed onion, mix well.
Pour into 'greased' casserole dish
Top with cheese and bake at 350 for 30-40 minutes or until cheese is bubbly and you are seeing browning of the stuffing at the side of the dish.

Umm... Stovetop Stuffing mix is not vegetarian - it contains chicken stock and chicken fat. It's not much, but it is there. I would not serve that to a vegetarian.

I LOVE butternut squash, never thought of the combination of squash and stuffing, will be buying a butternut next time I go to the grocery store.

I make a yellow squash casserole similar to that it also uses stuffing mix. I will have to get it from my computer and post it. Don't have it on my tablet. It's extremely good and I have had people who said they don't eat squash eat it and like it not realizing it's squash. Mine is not vegetarian.

Oops, my bad Mary C. I did not realize that stuffing mix had chicken stock or fat in it! By all means, try it with homemade stuffing and use vegetable stock. I'm sure that it wouldn't alter the taste.

Pkponder, most people don't realize that things that seem vegetarian are not. One of my daughters will indeed read all ingredients, while the other will eat something like Stovetop Stuffing. ( knowing that it has animal products.)

And I hate to say this but substituting veggie stock does alter the taste. But who am I, just their mom!

Here is the squash casserole I make sorry for the capitals I just copied and pasted it from a friend into my own recipe file.

SQUASH CASSEROLE

1 1/2 LBS SQUASH(or 2 cans squash)yellow
1 CAN CREAM OF CHICKEN SOUP
8 OZ SOUR CREAM
2 MED ONIONS CHOPPED
2 STALKS OF CELERY CHOPPED
1 CARROT GRATED
1 1/2 STICKS OF BUTTER OR MARGARINE
1 8OZ PCK OF HERB STUFFING MIX
SALT N PEPPER TO TASTE

PREHEAT OVEN TO 350%
SPRAY 13X 9 BAKING DISH

COOK SQUASH(drain) AND MASH ( ABOUT 30 MINS,)
COMBINE ALL INGREDIENTS IN BAKING DISH EXCEPT 1/2
STICK OF BUTTER AND HALF OF STUFFING MIX.(If you are using the stuffing mix that has separate seasoning pack use half now use the rest later)
MELT 1/2 STICK OF BUTTER AND MIX WITH REST OF STUFFING
MIX. POUR ON TOP OF CASSEROLE FOR TOPPING

BAKE AT 350% FOR 40to50MINS
LET STAND 15 MINS THEN SERVE.
YOU CAN USE THE FROZEN SQUASH ALSO.
I found it easier to mix all the ingredients in a large mixing bowl before putting in to the casserole dish.

This is a tater tot recipe I have been making for years. To make it a meal add meat to it, ham is really good in it.

Tatertots casserole

preheat oven 350%
spray 13x9 dish with pam
mix all ingredients together in a large bowl ( make
sure you get all tatertots coated
pour into pan spread evenly bake 35 to 40 mins

1 can cream of mushroom soup
8 oz sour cream ( I use 16 oz size)
1 onion chopped
1-2 cup grated cheese
1 package tatertots (I use onion ones)
some recipes call for 1 stick melted butter also. You can add chopped up ham or bacon too. Definitely use the 16 oz sour cream! Seasonings of your choice.

This is for dinner tonight.

sausage rice casserole (altered my way)
1 pound Breakfast Sausage * I use pre cooked Jimmy Dean sausage crumbles
1 6-ounce box Uncle Ben's long-grain and wild rice *I use pre cooked packaged rice that you heat in the microwave, like Kroger brand brown rice.
2 small onions, chopped
1 4-ounce can mushroom pieces or larger can drained
1 10.75-ounce can condensed cream of mushroom soup
4 tablespoons butter* I use 2 Tbs
Steps
Preheat oven to 350 degrees F. Cook rice according to package directions. In a heavy skillet over medium heat, cook sausage and onion until thoroughly done, about 4-5 minutes. Drain. Combine all ingredients except butter and pour into casserole dish. Dot top with butter. Bake until bubbly, about 25 minutes. * I cook it for about 40 -45 mins.
*I add a hand full of grated cheese on top before baking.
*I cook my onions either in a skillet or in a microwave safe bowl in the microwave with a little olive oil.

**I use the pre cooked Jimmy Dean sausage crumbles
I saute my onions to make them soft and tender.
I use the pre cooked packages of rice, I like the Kroger brand brown rice, just heat in microwave then add to the casserole.
I use half the amount of butter
I cook it for about 25 minutes longer
I sometimes add some grated cheese on top.

I made the Death Chicken today and it was delicious. Definitely not low fat but delicious anyway!

no it is not low fat lol if you knew Jill the Sweet potato queen none of her recipes are low fat!
I bought the stuff to make it this week.

My brother in law has retired and has taken on the job of being care giver for their mother who is 92. So part of his job now is cooking. He loves my cooking and asked if I could help with some good easy recipes. I sent him a big package of copies of many of my long time faves that would be easy for him. The Death Chicken was one of them.
Well we just went there for Thanksgiving and the night we arrived he had dinner waiting for us and it was Death Chicken!!
I gave him a big hug and dug in! He did it just right.

I'm fixing to make tatertot casserole. Thanks Ravencajun!! (I'm going to add some Eckrich sliced sausage to make it a meal in 1 pan).

Here's a good "tater tot" topped hot dish. We love our casseroles and hot dishes here in Minnesota. LOL!

Crumble ground beef (I'd suggest lean or be sure to spoon out excess fat) mixed w/half cup chopped onions in 7x11 baking dish, dashes of salt and pepper to season. Cover with foil and bake at 325o until ground beef is cooked through and onion is semi soft..

Layer contents of a 15 oz. can of Veg-all and a 15oz. can of Blue Lake cut green beans. Cover completely with tater tots. Mix 1/3 to 1/2 cup water to can of Campbell's Golden Mushroom soup and pour over all.

Bake uncovered at 350o until hot dish is bubbling @35-45 minutes.

Good reheated as a leftover, too.

I hope you enjoy the tatertot casserole, I have used the same smoked sausage in it before.

Never tried the other tatertot dish but sounds very hearty and good.
